
Château d'Esclans - Whispering Angel Côtes de Provence RosÊ
Chateau dâEsclans, a magical property, is situated in the heart of Provence, northeast of St. Tropez. With his acquisition of the Château in 2006, Sacha Lichineâs vision was to create the greatest rosĂŠs in the world, igniting the âRosĂŠ Renaissanceâ. Now in its sixteenth vintage, Château dâEsclans is home to Whispering Angel.
Château dâEsclansâ harvest takes place each September from sunrise to noon to avoid the heat of the day. During the harvest, grapes, at their ripest, are selected, picked and carefully placed in small (10 kilo) crates this size of which is chosen in order to avoid too many grapes at the top crushing grapes at the bottom of the crates. Caves dâEsclans Whispering Angel and some of Rock Angelâs voluminous quantity of grapes are mechanically harvested at night time to avoid heat of the day as well.
The grapes are sorted manually and once more using a computer-controlled camera. All grapes which go into vinification are perfectly de-stemmed and meet the requirements of wine maker regarding shape, size, color and general condition. After sorting, grapes are cold-pressed in Nitrogen (7 - 8 °C) in order to avoid oxidation and to maintain freshness. Fermentation takes place either in barrels or stainless steel containers, depending on whether the grape comes from a first pressing or subsequent ones.
Finally, wines are blended in order to maintain consistency between vintages.
