HououBiden - Black Phoenix Junmai Ginjo

Aiyama rice milled down to 55%, grown in Hyogo. The rare Aiyama is a notable sake rice on par with Yamadanishiki and Omachi. A sake with a great balance of acidity & weight,  fruit aromas and subtle rice umami which can be enjoyed throughout the meal. Recommended chilled to room temperature.
